5 Minute Thai Pineapple/seafood Curry

This curry is delicious and truly takes minutes to prepare. Pieces of a firm fish can be substituted for shrimp —Joy Bannett

  • Prep time 5 minutes
  • Cook time 5 minutes
  • Serves 4
  • 2 cups coconut milk
  • 1 cup crushed pineapple
  • 1/4 cup fish sauce
  • 2 tablespoons red curry paste
  • 1 1/2 tablespoons sugar
  • 8 0z. shrimp
In This Recipe
  1. combine all ingredients but shrimp and heat to boiling.. Add shrimp Cook 3 minutes Serve with steamed Jasmine rice

    Pleasant but not as spicy as I would like. The sauce was too watery. I doubled the quantity of shrimp. I used lite coconut milk instead of regular and green curry paste instead of red curry. Perhaps that is what contributed to consistency of sauce and lack of pizazz. Super easy to make.
