Vegan Massaman Thai Curry Spice Mix

Learn how to make vegan Massaman spice blend with lemongrass that you can use in Thai curries and noodles. —Limitless Allergies

What You'll Need
  • 6 green cardamom pods
  • 6 whole cloves
  • 2 cinnamon stick
  • 1 teaspoon coriander seed
  • 1 teaspoon cumin seed
  • 4 dried red button chilies
  • 1 tablespoon black peppercorn
  • 2 tablespoons dried lemongrass
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ginger powder
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon mace
  • 1 teaspoon salt
  1. Heat a pan on low to medium heat. Add the whole spices and roast until fragrant about three minutes. Remove from heat and cool slightly.
  2. Add the spices to a coffee grinder and grind the spices to your desired consistency.
  3. Now add all the spices in a jar (the ground spices and the ones in the coffee grinder together), close the lid and shake to mix. The spice mixture is ready to be used.
