Remarkably simple homemade strawberry jam made without sugar using chia seeds for natural thickening. Keto, Paleo and Gluten-free —Jamie Popp

  • Prep time 10 minutes
  • Cook time 20 minutes
  • Makes three cups
Ingredients
  • 1 Container Fresh Strawberries
  • 2 tablespoons Monk Fruit with Erythritol Sweetener
  • 3 tablespoons Chia Seeds
  • 1 splash Fresh Lemon Juice
  • 2 teaspoons Organic Vanilla
In This Recipe
Directions
  1. Wash and hull the large container of strawberries and cut in chunks.
  2. Cook strawberries over medium heat until jam-like consistency and mash strawberry pieces to desired texture.
  3. Sprinkle in lemon juice and stir.
  4. Add in chia seeds and stir until thickened.
  5. Pour into mason jar, add vanilla and stir. Cover and store in refrigerator.
