Ingredients

shortcrust pastry.

400 grams grated Pecorino or similar semi hard cheese.

100 grams scrambled feta
-
3 large eggs
-
30 grams fine semolina. you can use plain flour.

1 heaped teaspoon backing powder

2 heaped tablespoons dried mint.
Directions

turn oven on at 170 degrees Celsius.
Oil a 20 cm baking tray. Not a tart tray.

Roll the pastry to app. 1 cm thickness and blind bake for 10 minutes.

Beat the eggs and mix all the ingredient together with a spatula.
take out the tray from the oven and pour the cheese mixture.

Bake for another 30 to 35 minutes.
Take it out of the oven and let it cool a bit before serving.
It can be eat cold as well.
