Ingredients
- shortcrust pastry.
- 400 grams grated Pecorino or similar semi hard cheese.
- 100 grams scrambled feta
- 3 large eggs
- 30 grams fine semolina. you can use plain flour.
- 1 heaped teaspoon backing powder
- 2 heaped tablespoons dried mint.

Directions
- Step 1
turn oven on at 170 degrees Celsius. Oil a 20 cm baking tray. Not a tart tray.
- Step 2
Roll the pastry to app. 1 cm thickness and blind bake for 10 minutes.
- Step 3
Beat the eggs and mix all the ingredient together with a spatula. take out the tray from the oven and pour the cheese mixture.
- Step 4
Bake for another 30 to 35 minutes. Take it out of the oven and let it cool a bit before serving. It can be eat cold as well.
