Meanwhile heat oil in a pan, add chopped onion. Fry till golden brown.
Now add ginger garlic paste, saute for a minute. Then add the chicken, tomatoes and all spices. Cover and cook until the chicken`s internal temperature reaches 165° F on food thermometer. Add a little water if required.
While the chicken is cooking, boil 3 cups of water with 3 tablespoon of salt, in a separate pot. Once the water boils add the rice hand. After the rice has boiled - strain it and set a side.
Once the chicken is done add the olives, lemon juice and chilies. Then top it with rice, cover and let it steam for 10 to 15 mins on low heat.
After 20 minutes uncover and toss to mix together. Serve hot, enjoy.
