Simple (and delicious) beans, with no added fats, made using locally grown Jacob's Cattle Beans and Maine Maple syrup. —Rebecca Zicarelli

Ingredients

Jacob's Cattle Beans

1/4 cup
maple syrup

2 teaspoons
mustard powder

2 teaspoons
kosher salt

bayleaf

shallot or onion, peeled
Directions

Pick over the beans, place in a bowl and cover with water by at least 2 inches, let soak overnight.

Drain and rinse the beans. Place in a 2-quart casserole or slow cooker, add the rest of the ingredients, and cover with water by at least two inches. Simmer until the beans are soft and melting, about six hours.
