Peanut Butter Banana Chocolate Chip Cookies

Cookies that are healthy enough to eat for breakfast! These cookies are make with gluten free oats, powdered peanut butter and coconut sugar to satisfy your sweet tooth without the guilt! —What She's Cooking

  • Prep time 15 minutes
  • Cook time 13 minutes
  • Makes 9 cookies
  • 1 ripe banana
  • 1 egg
  • 1/4 cup coconut sugar
  • 2 tablespoons coconut oil
  • 1/2 cup rolled oats
  • 1/4 cup almond flour
  • 2 tablespoons powdered peanut butter
  • 1/4 cup chocolate chips
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon salt
In This Recipe
  1. Preheat oven to 350
  2. Microwave your ripe banana in a large microwave safe bowl. (I find that microwaving them makes it way easier to mash them up)
  3. Mash up the banana, then add the egg and melted coconut oil. Mix well.
  4. Slowly stir in the oats, almond flour, coconut sugar and powdered peanut butter. Mix well until all ingredients are fully combined.
  5. Add the baking powder, salt and vanilla and mix thoroughly
  6. Last – fold in the chocolate chips (ALWAYS add chocolate chips last to prevent melting)
  7. Spoon the dough evenly onto a parchment paper lined baking sheet.
  8. Bake at 350 for 13 minutes, or until edges start to get golden brown
  9. Let cool and then enjoy!
