Cupcake looking Sushi with fun topping. —Rie
Ingredients

Spaghetti sticks.
Directions

Prepare Sushi Rice. Disolve sugar in vinegar. Add pinch of salt. Add the vinegar in the rice while the rice is still hot.

Cut the imitation crab meat and avocado into small pieces. Mix with sushi rice.

Divide the sushi rice into 3 equal-sized balls.

Lay out a piece of plastic wrap and place a rice ball in the center. Lift and fold the four corners of the plastic wrap and twist.

Flatten the top for the cream topping. Place the rice ball in a paper cup with the flat side up.

Dry the tofu to remove excess water. Wrap the tofu in a paper towel and heat it in a micro-wave for about 1 minute.

Mix the tofu with avocado, mayonnaise and lemon juice in a food processor to get a nice smooth creamy texture.

Add salt and pepper to taste.

Decorate the rice ball with tofu cream using a decorating tube or spoon so it will look like a cup cake!

Repeat to make 2 more "Cupcake" Sushi.

[For Decoration]
Combine two slice of imitation crab meat (facing the white part]

Place a slice of avocado to imitate a leaf of apple.

Decorate black sesame seeds on surface to imitate half-sliced apple.

Pin half edamame into a mini tomato with a dry spaghetti stick.

Serve the Cupcake sushi with apple looking tomatoes.
