Ingredients
  • For the cookies
  • 6 ounces butter
  • 2 ounces powdered sugar
  • 6 ounces all-purpose flour
  • 1 teaspoon baking powder
  • 2 ounces custard powder
  • For the buttercream
  • 6 ounces powdered sugar
  • 3 ounces butter, softened
  • 0.25 teaspoons vanilla extract
Directions
  1. Preheat oven to 350F/180C.
  2. Cream the butter and sugar until light and fluffy.
  3. Sift the flour, baking powder and custard powder into a bowl, then add to the creamed mixture. Bring together to form a cohesive ball.
  4. Roll out to 1/4″ thick. Cut into small rings (or whatever shape you choose) and place on a baking sheet.
  5. Bake for 12-15 minutes. Times will vary depending on the size of your biscuits.
  6. Cool on a wire rack and then sandwich together with buttercream.
