This fresh, light gin cocktail makes me think of misty nights in late spring when you can smell the new growth of a forest. Although juniper and pine are flavors associated with winter, they work well with a spritz of lemon in this refreshing hot-weather drink. —Politan

Pour the gin and pine syrup into a cocktail shaker with the ice cubes. Juniper and cucumber forward gin, like Hendricks, will work best for this recipe. If you have no pine syrup, it is easy to make at home by steeping fresh, clean young pine shoots in hot simple syrup for a day.

Scrub the lemon to remove any wax and remove a strip of peel from it using a vegetable peeler or paring knife. The white pith will not release flavor for this recipe. Fold the peel with the yellow portion inwards to release oils from the skin, then drop it into the cocktail shaker.

Shake the cocktail vigorously for 15 to 30 seconds. Strain and add sparkling water to taste, about 2-3 oz per cocktail. The mixture should be a cloudy white color. Garnish with lemon peel or pine needles.
