Low acyl gellan gum can be used in fruit preparation like heat-stable bake stable fruit filling or other preparation like yoghurt fruit preparation, with excellent thermal and freeze-thaw stability, good moisture retention, low use levels, good flavor release and no impact on color.

What You'll Need
  • 10 grams Gellan Gum
  • 350 grams Raspberry fruit pure
  • 50 grams water
  • 100 grams Simple syrup (TPT)
  1. 1 Combine the Ingredients and heat until boiling point 2 Pour the mixture in a frame 3 Set in the fridge - done! then cut it into small pieces and use as bakery filling on bakery item.
