The Roasted Strawberry Margarita From Cointreau

Ingredients
  • 1 ounce Cointreau
  • 2 ounces mezcal
  • 1 ounce fresh lime juice
  • 2 ounces roasted strawberry purée
Directions
  1. To make roasted strawberry puree: Remove strawberry tops, broil-char in oven. Let cool. Place in blender. Fine strain.
  2. Add all ingredients to shaker with ice.
  3. Shake and fine strain over ice into a rocks glass.
  4. Garnish with lime wheel and roasted or grilled strawberry

I made this tonight, doubling the recipe. Good stuff! I was hoping that the roasted strawberries would bring out the smokiness of the mezcal more than it did. In fact, I'm not sure I'd be able to notice the difference if I were to swap out tequila for mezcal. But still very good. Given how vague this recipe's instructions are for roasting strawberries, I used Fine Cooking's recipe, which calls for tossing hulled berries in sugar and then roasting at 425 for 15 minutes, stirring every five minutes. I skipped the step of straining the pureed roasted berries, but otherwise followed the recipe. It was a very thick margarita, which I liked. Next time, I think I will make the strawberry puree into ice cubes, and then run them through my snow cone maker.
