Vanilla Tahini Granola with Apricots and Cashews

Nutty and sweet with chewy apricots and creamy cashews. Try sprinkled over vanilla yogurt or frozen yogurt.

Bonus: the vanilla and tahini make your kitchen smell incredible. —Alexandra Abed

  • Prep time 15 minutes
  • Cook time 35 minutes
  • Makes about 3 cups
Ingredients
  • 2 cups old-fashioned oats
  • 1/3 cup tahini
  • 1/3 cup honey
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup dried apricots
  • 1/2 cup cashews

Directions
  1. Preheat oven to 300˚F.
  2. In a small bowl, mix tahini, honey, vanilla, salt and cinnamon. Once combined, pour mixture into large sauce pan and warm on low heat. Add oats and mix well until oats are covered. If adding raw cashews, add them now.
  3. Pour mixture onto baking sheet and bake for 35-40 minutes.
  4. While granola bakes, chop apricots and mix with pre-roasted cashews, if using.
  5. Once granola is baked, mix with apricot and cashews and let cool completely before enjoying.
