Ingredients
- For the cookies:
-
1 cup
flour
-
8 tablespoons
cold butter
-
1/4 cup
honey
-
1/2 teaspoon
cinnamon
-
1 1/4 teaspoons
orange zest
-
1/4 teaspoon
salt
-
1/2 teaspoon
vanilla extract
- For the chocolate glaze:
-
4 tablespoons
butter
-
2/3 cup
bittersweet chocolate
Directions
- For the cookies:
-
By hand or using a stand mixer, combine honey, vanilla extract and butter together in a big bowl until smooth. Add flour, cinnamon, orange zest and salt. Use a fork or clean hands to combine until crumbly dough forms.
-
Shape dough into a 1 inch diameter log, wrap in plastic wrap and chill in refrigerator for at least 30 minutes but as long as overnight.
-
When dough is chilled, preheat oven to 325. Slice dough into 1/2 inch thick pieces and place on cookie sheet two inches apart. Bake for 15-20 minutes or until set and golden brown on the edges. Transfer to rack to cool.
- For the chocolate glaze:
-
While cookies are cooling, melt butter in a small mixing bowl placed over a pot of simmering water. Add chocolate and stir until smooth and glossy.
-
Remove bowl of chocolate from pot and dip cooled cookies halfway into warm chocolate mixture. Sprinkle with more orange zest, crumbled almonds or whatever sounds good to you.
