light & fluffy frosting, also known as a roux frosting, that uses a milk and flour paste instead of powdered sugar giving you a frosting that is airy and just the right amount of sweetness. —Raul Estrada

What You'll Need
Ingredients
  • 1/2 cup Whole milk
  • 2 tablespoons All-purpose flour
  • 1 pinch Kosher salt
  • 3/4 cup White sugar
  • 1/2 cup Unsalted butter
  • 2 tablespoons Vanilla extract
Directions
  1. Whisk together milk and flour in saucepan over medium heat until mixture thickens and a paste forms. Approximately 5 minutes.
  2. In stand mixer bowl, beat together butter, sugar, vanilla, and salt on medium-high speed until creamy, scraping at the sides as necessary.
  3. Add milk-flour paste until mixture is light and airy.

It’s the best icing, really!
My grandma made this all the time, but she didn’t call it “Ermine Frosting”, it was just icing for the Devil’s Food cake she made.
I’ve tried just about all chocolate cake recipes out there over the years, and I found it.
And this now completes the search for the best icing (although 7 minute frosting comes in a close second:).

Totally agree, this frosting is the best. I'm still looking for the perfect chocolate cupcake recipe... Tried dozens, but nothing so far knocked my socks off.

I found the best and now only chocolate cake/cupcake recipe that I’ll use after trying lots over the years.
I didn’t want it to have too much (or any) butter because I knew the frosting most likely would…I guess I can’t post it here because it wasn’t on the site.
