Vegan Basil Cashew Pesto

  • Serves 4
  • 35 grams Fresh basil leaves
  • 2 Garlic cloves
  • 60 grams Cashews (unroasted, unsalted)
  • 2 tablespoons Nutritional yeast
  • 1/2 teaspoon Sea salt
  • 1/3 cup Extra-virgin olive oil
In This Recipe
  1. Place everything in a blender or food processor, and blend until smooth
  2. Add water to reach the desired consistency depending on what you're making. This pesto works great with pasta, in sandwiches, or to drizzle on top of roasted vegetables
