This simple pudding makes for a great tasty start to your day. A trifecta of superfoods, all in one preparation. I love its creamy texture with the addition of fruit. You can switch up the fruit to whatever you have that is fresh or frozen. —Chef Reza Setayesh | Plant Loving Humans
Ingredients

2 cups
soy, oat, or your favorite plant-based milk

1/2 cup
chia seeds

1 tablespoon
beet powder

1 teaspoon
vanilla extract

1 teaspoon
ground cinnamon

1/4-1/2 cups
coconut sugar or maple syrup

1/2 cup
fresh or frozen berries, plus a few extra for garnish

dollop
of your favorite plant-based yogurt (optional)
Directions

Mix all ingredients in a medium-sized bowl

Place the bowl in the refrigerator for at least one hour, or overnight if you’re making this for breakfast the night before

Divide and place into into 4 containers

Top with a dollop of yogurt and a few berries, and enjoy!
