This simple pudding makes for a great tasty start to your day. A trifecta of superfoods, all in one preparation. I love its creamy texture with the addition of fruit. You can switch up the fruit to whatever you have that is fresh or frozen. —Chef Reza Setayesh | Plant Loving Humans

What You'll Need
Ingredients
  • 2 cups soy, oat, or your favorite plant-based milk
  • 1/2 cup chia seeds
  • 1 tablespoon beet powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4-1/2 cups coconut sugar or maple syrup
  • 1/2 cup fresh or frozen berries, plus a few extra for garnish
  • dollop of your favorite plant-based yogurt (optional)
Directions
  1. Mix all ingredients in a medium-sized bowl
  2. Place the bowl in the refrigerator for at least one hour, or overnight if you’re making this for breakfast the night before
  3. Divide and place into into 4 containers
  4. Top with a dollop of yogurt and a few berries, and enjoy!
