Oat Milk Ice Cream Sandwiches

What You'll Need
  • Ice Cream Ingredients
  • 2 cups Creamy Oat Milk
  • 1/2 cup Almond Butter
  • 1/3 cup Maple Syrup
  • Double Chocolate Cookie Ingredients
  • 2 cups All Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 8 tablespoons Softened Vegan Butter or Regular Butter
  • 1/3 cup White Sugar
  • 1/3 cup Brown Sugar
  • 1/4 cup Unsweetened Apple Sauce
  • 1 tablespoon Hot Water
  • 1 teaspoon Instant Expresso Powder
  • 1/3 cup Chocolate Chips
  1. To make Ice Cream: Whisk cold oat milk, maple syrup and almond butter together. I found it easiest to use an electric stand mixer starting on low and then increasing speed to throughly combine. Add mixture to ice cream maker and follow manufacturers instructions. Place ice cream in freezer for a couple hours to harden.
  2. For the Cookies: Mix together flour, baking soda and salt in a medium size bowl.
  3. In an electric stand mixer beat together softened butter, white sugar and brown sugar until light and fluffy.
  4. Add instant expresso powder to hot water to dissolve and add it along with the applesauce to the butter mixture and mix until combined.
  5. Slowly add flour mixture to mixer and blend until combined.
  6. Add in chocolate chips and blend until just combined.
  7. Preheat oven to 375 degrees. While oven is preheating place cookie batter in refrigerator for about 20 minutes to chill.
  8. Using an ungreased cookie sheet roll about 1/4 cup of cookie dough into a ball and place on cookie sheet. Leaving space between for the cookies to spread. Bake for 12-14 minutes and cool.
  9. Assemble the Sandwiches: Using an ice cream scooper add one scoop of ice cream to the bottom of one cookie and top with another. You can eat them right away or freeze for a firmer ice cream sandwich.

The title of the recipe and the photo describe a “double chocolate” cookie but the ingredients don’t include cocoa or chocolate, just chocolate chips. The resulting coffee flavored cookie is pretty much coffee colored, not much of a contrast to the oat milk ice cream. I wonder if the recipe’s author could supply the missing ingredient? The height of the cookies once baked works against use as a sandwich layer.
