Vegan Raw Plantain Salad

This is one of my favourite creation when it comes to salads, it's pretty easy and absolutely delicious.
A lot of people find eating raw plantain a problem but I guarantee, after trying this salad, you'll feel differently. —Fork My Day

  • Prep time 5 minutes
  • Cook time 10 minutes
  • Serves 4
  • 1 tablespoon lemon juice
  • 2 semi ripe plantain
  • 1 medium red onion
  • 2 medium sized tomatoes
  • 1 tablespoon crushed black pepper
  • 1 teaspoon sea salt (adjust to your taste)
In This Recipe
  1. Cut up your plantain, onion and tomatoes and add to a salad bowl.
  2. Add lemon juice (I find using fresh lemon better for this recipe), black pepper and salt, then mix together with a kitchen tong.
  3. Marinate for 5-10 minutes in the fridge or in a cool place, garnish with coriander (cilantro for the folks outside of the UK) and serve.
