Pazi is a type of Chard leaves that Is very popular in and around Black sea coast of Turkey which is widely used in cooking sautéed dishes, pastries and making stuffed leaves.. It is related to Spinach and therefore its nutritional properties and taste is similar to that of spinach. This dish is very tasty without meat, but for those who prefer to have meat can add some minced beef. Garlicky yogurt topped with dried mint and chilli flakes enhances the flavour of this nutritious dish. —Saboush

Ingredients

2 bunches
Chard, stalks removed shredded into 5 cm wide strips

2-3 tablespoons
Vegetable oil

Medium onion, finely chopped

1/2 cup
Coarse brown bulgur

Cloves of garlic, ground

1 tablespoon
Tomato paste

1/2 cup
Chopped tomatoes

2 cups
Vegetable stock/hot water

Salt for seasoning

Minced beef (optional)
Directions

Heat a shallow pan with vegetable oil, sauté the onions until soft and pink. If you are using minced beef, add them in and stir fry until brown.

Add the tomato paste, tomatoes and garlic. Sauté for a further 5-8 minutes until tomatoes are soft, and then stir in the shredded chard leaves and sauté until the colours turns to a darker green

Finally add in the bulgur and the vegetable stock/water, season and bring to boil and simmer until the bulgur grains are cooked.

Serve warm with Yogurt seasoned with garlic/mint..
