Once you’ve had this Sloppy Joe you won’t want any other. It has the perfect balance of tangy, spicy, sweet and savory. Traditionally had with Goan pao, a delicious bread roll made, made with palm toddy instead of yeast. “For a long time, Goans would wake up to the call of the poder, bringing fresh-out-of-the-oven poee, pao and other local breads to their doorsteps.” —MasalaMama

hamburger buns or ciabatta rolls

1-2 tablespoons
ghee or oil plus more for coating buns

red onion, chopped

green bell pepper, chopped

red bell pepper, chopped

ground beef

Directions

Heat 1½ tablespoons of oil in a large skillet over medium heat. Add onion and peppers and sauté until they begin to soften.

Add ground beef, season with salt and pepper, and cook until the meat is completely cooked through.

Add Masala Mama Vindaloo Simmer Sauce to the skillet and simmer 2-3 minutes. Adjust salt to taste.

To assemble, spread a bit of ghee or oil on the rolls and brown them on a griddle or skillet. Spoon a generous amount of the meat mixture onto the bottom roll, and then top with the other half.
