  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup vegetable or canola oil
  • 1 cup oat milk
  • 2/3 cup pure maple syrup
  • 1 large banana, mashed
Directions
  1. Preheat oven to 425ºF. Line a standard muffin tin with cupcake liners.
  2. In a large bowl, whisk the flour, baking powder, baking soda, and salt together.
  3. In a separate bowl, mix the vegetable oil, oat milk, and maple syrup together. Stir in the mashed banana.
  4. Using a rubber spatula, fold the wet ingredients into the dry ingredients until combined. Fill the liners 2/3 of the way up with batter.
