Do the math: 3 ripe but lonely mangos + 1 Blazing Philadelphia summer (94F with humidity to match) = Mango Lassi Popsicles for All!
Inspired by Madhur Jaffrey’s recipe for the soothing drink. —Windischgirl
Ingredients

1 cup
Chopped ripe mango (about 1 large)

1 cup
Good quality, full-fat Plain yogurt (not Greek!)

3 tablespoons
Granulated sugar

1/2 teaspoon
Ground cardamom

1/2 teaspoon
Ground ginger

Juice of 1 lime

Water as needed
Directions

In a blender container, add the mango, yogurt, and sugar and blend until smooth, scraping down the sides as needed. Add water by teaspoon If needed, to get a thick but pourable consistency.

Add the spices and lime juice and blend again, until well combined. Taste and adjust sugar and lime juice. You want a little sweet, a little tangy, creamy, smooth, and tasting nicely of mango.

Pour the mixture into popsicle molds; I get about 6 popsicles of 1/3 c each. Put the holders in place and freeze at least 4-6 hours, or until firm. To unmold, run the outside of the mold under warm water until the popsicle starts to loosen. Sit in the shade or in front of the fan, and enjoy.
