To make cinnamon syrup: in a small or medium saucepan, combine one cup of water, 4-5 broken up cinnamon sticks and bring to a light simmer. Add in one cup of sugar, and gently stir to dissolve the sugar. Maintain a very light simmer for 5-10 minutes, then remove from the heat and allow the syrup to cool. Once cooled, strain the syrup through a fine mesh strainer to remove the cinnamon sticks and store the syrup in a glass jar in the refrigerator up to 2 weeks.
