Mango Lassi-Inspired Popsicles

Do the math: 3 ripe but lonely mangoes + 1 sweltering Philadelphia summer = Mango Lassi-Inspired Popsicles for all!

What You'll Need
Ingredients
  • 1 cup Chopped mango, about 1 large
  • 1 cup Plain full-fat yogurt (not Greek)
  • 3 tablespoons Granulated sugar
  • 1/2 teaspoon Ground ginger
  • 1/2 teaspoon Ground cardamom
  • Juice of 1 lime
Directions
  1. In a blender container, combine all ingredients and blend until smooth. If the mixture is very thick, add cool water, a tablespoon at a time, until it reaches a thick but pourable consistency.
  2. Taste and adjust the flavors: a little more lime or sugar, as desired. Freezing will mute the flavors so feel free to add in a pinch more of everything. Blend to combine. This yields about 2 cups of puree; number of popsicles will depend on the size of your molds.
  3. Pour the mixture into a popsicle mold, place the handles, and freeze until firm, at least 4 hours.
