A wonderful, savory and slightly sweet curry, chicken salad sandwich. Had something similar at Oakville Grocery in Oakville (Napa Valley) - recipe created with Stasia Hazard. —Eric Newberg
Ingredients

1.5 cups
any chicken meat

1
stalk of celery
-
1/3 cup
golden or regular raisins

3 tablespoons
mayonaisse

2 tablespoons
heaping of curry powder

2/3 cup
arugula
-
1/4 cup
walnuts (optional)

slices of good bread
Directions

Chop chicken and celery into small pieces
-
Add curry, raisins and mayonaisse, along with chicken and celery into a bowl and stir until well mixed (nice yellow color)

Toast 4 slices of bread and butter
-
Place arugula on bread, then chicken curry mixture, salt and pepper and cover with other slice of bread
