Curry Chicken Sandwich with Arugula

A wonderful, savory and slightly sweet curry, chicken salad sandwich. Had something similar at Oakville Grocery in Oakville (Napa Valley) - recipe created with Stasia Hazard.
Ingredients
- 1.5 cup any chicken meat
- 1 stalk of celery
- 1/3 cup golden or regular raisins
- 3 tablespoon mayonaisse
- 2 tablespoon heaping of curry powder
- 2/3 cup arugula
- 1/4 cup walnuts (optional)
- 4 slices of good bread

Directions
- Step 1
Chop chicken and celery into small pieces
- Step 2
Add curry, raisins and mayonaisse, along with chicken and celery into a bowl and stir until well mixed (nice yellow color)
- Step 3
Toast 4 slices of bread and butter
- Step 4
Place arugula on bread, then chicken curry mixture, salt and pepper and cover with other slice of bread
- Step 5
