Curry Chicken Sandwich with Arugula

A wonderful, savory and slightly sweet curry, chicken salad sandwich. Had something similar at Oakville Grocery in Oakville (Napa Valley) - recipe created with Stasia Hazard. —Eric Newberg

What You'll Need
  • 1.5 cups any chicken meat
  • 1 stalk of celery
  • 1/3 cup golden or regular raisins
  • 3 tablespoons mayonaisse
  • 2 tablespoons heaping of curry powder
  • 2/3 cup arugula
  • 1/4 cup walnuts (optional)
  • 4 slices of good bread
  1. Chop chicken and celery into small pieces
  2. Add curry, raisins and mayonaisse, along with chicken and celery into a bowl and stir until well mixed (nice yellow color)
  3. Toast 4 slices of bread and butter
  4. Place arugula on bread, then chicken curry mixture, salt and pepper and cover with other slice of bread
  5. Enjoy!
