Ultimate Homemade Nachos With Queso

Ok, if you are a fan of this kind of thing-you’ve got to make these! Flavorful spicy queso, crunchy homemade chips, savory spiced sausage and black beans, fresh veggies….yes! Homemade chips kind of send these over the top of deliciousness, but skip and buy good store bought to simplify. —simmering essence

What You'll Need
Ingredients
  • Chips & Queso
  • 12 Corn Tortillas
  • 2 cups Canola Oil
  • Pinch Salt
  • 2 tablespoons Butter
  • 2 tablespoons Flour
  • 1 Shallot, Chopped
  • 1 Garlic Clove, Minced
  • 1 cup Milk
  • 1 cup Mixed Cheese (I like sharp cheddar+monterey jack, but use whatever!)
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Oregano
  • 1/4 teaspoon Smoked Paprika
  • 1/4 teaspoon Cumin
  • 1/4 teaspoon Cayenne
  • 2 tablespoons Red Salsa
  • Sausage With Black Beans
  • 1 pound Sausage, Ground
  • 1 cup Fresh Cooked Black Beans
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Oregano
  • 1/2 teaspoon Smoked Paprika
  • 1/2 teaspoon Cumin
  • 1/4 teaspoon Cayenne
Directions
  1. Chips & Queso
  2. Pour oil into a large, shallow skillet, adding more if needed to give a depth of an inch. Heat over medium high until a small piece of tortilla sizzles when you add it to the oil. Line a baking sheet with paper towels and grab tongs and a fork. Place as many tortilla triangles that will fit in the hot oil. Let sizzle for about 30 seconds and flip over when just light golden brown. Cook for another 30 seconds and remove to paper towel lined cookie sheets. Sprinkle with a little salt.
  3. Melt the butter in a medium size saucepan. Add the shallot and garlic and stir for 30 seconds, until they become fragrant. Add the flour and whisk for a minute to combine and cook. Slowly add the milk while whisking. Let it cook a minute or 2 to thicken. Add the cheese, spices, and salsa and stir to combine. Let the mixture cook a couple of minutes, stir, and then set to low, stirring occasionally until ready to use. Taste and add more seasoning/salsa if desired.
  1. Sausage With Black Beans
  2. Saute the pork in a large skillet over medium high heat, breaking it up so everything gets small and crumbly–kind of getting to that crispy state. Drain off any oil. Add the black beans at the very end so they don’t get mushy and gently combine them with the sausage. Taste and add more seasoning if you’d like.
  3. Spread tortilla chips in an even layer on a large platter or individual plates. Pour a good amount of queso over the chips and then sprinkle the sausage, bean mixture over the cheese. Top with avocado, tomatoes, and cilantro, squeezing the lime over the entire dish. It was a bit of an ordeal to get here, but take a bite out of that first chip and you’ll know it was all worth it!!
