COVID has really upped our take-out game. One thing we have definitely kept up is our monthly Pork Lo Mein take out order. We decided to learn and refine our own Quick Pork Lo Mein recipe, because what else are we going to do in quarantine? We have now been making this on repeat to eat hot, cold, room temperature, you name it. Because isn’t Chinese food the best at any temperature! So make a big batch and enjoy eating this Quick Pork Lo Mein all week long! This will be your new go-to Chinese take out meal. —marvelous munch

Ingredients
  • Lo Mein Sauce
  • 2/3 cup soy sauce
  • 4 cloves garlic (minced)
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 tablespoon sesame oil
  • 4 tablespoons brown sugar
  • 2 tablespoons fish sauce
  • 1/2 tablespoon rice vinegar
  • Pork Lo Mein
  • 2 thin pork chops
  • 1 carrot (julienned)
  • 1/2 yellow onion (thinly sliced)
  • 1 cup snap or snow peas
  • 1 cup broccoli florets
  • 3 green onions (chopped)
  • 1 package lo mein noodles
  • 3 tablespoons canola oil
  • 1 tablespoon sesame oil
  • 3 cloves garlic (minced)
  • 1 tablespoon ginger (grated or powder)
Directions
  1. In a small sauce pan add sesame oil and garlic over medium heat
  2. Once fragrant add soy sauce, fish sauce, and rice wine vinegar and bring to simmer
  3. Slowly add in the brown sugar and continue to whisk until the sugar has dissolved
  4. In a small bowl mix together cornstarch and water then slowly add to the sauce which continuly whisking to avoid any clumping
  5. Let sauce simmer another 3-5 minute and take off the heat
  6. Cook lo mein noodles according to directions on package and set aside
  7. In a large wok or saute pan add canola oil and sesame oil over medium to high heat
  8. Once oil is hot, add garlic and ginger and cook 1-2 minutes
  9. Add sliced pork to the hot oil and cook 3-5 minutes or until pork is cooked
  10. Throw in all the veggies to the wok and mix well
  11. Once the veggies have cooked through but are still holding a firmness slowly pour in your sauce
  12. Mix the veggies, pork, and sauce together to make sure everything is coated
  13. Little by little add the lo mein noodles to the wok and continue to mix together
  14. Remove from heat and serve with extra green onion as a garnish!
