Chopped Cheese Sandwich With Bread & Butter Pickles

What You'll Need
Ingredients
  • Bread & Butter Pickles:
  • 2 cups apple cider vinegar
  • 1/2 yellow onion (sliced thinly)
  • 1 teaspoon yellow mustard seeds
  • 1 teaspoon black mustard seeds
  • 1/3 cup granulated sugar
  • 1/3 cup kosher salt
  • 1 teaspoon whole cloves
  • 1 teaspoon turmeric powder
  • 2 dried bay leaves
  • 8 Kirby cucumbers (sliced into thick coins)
  • Chopped Cheese
  • 1 tablespoon beef tallow or canola oil
  • 1/2 yellow onion (sliced thinly)
  • Salt and pepper, to taste
  • 1 pound ground beef
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 packet Goya Sazón or Adobo seasoning
  • 2 to 3 slices of your favorite cheese( american cheese is a standard for this sandwich)
  • Bread of your choice (a nice crusty roll would be nice )
  • Lettuce and tomato, for serving
Directions
  1. Bread & Butter Pickles:
  2. Combine all ingredients besides cucumbers together in a medium saucepan and bring the liquid to a boil, making sure all the salt and sugar dissolves.
  3. In a mason or bowl pour the hot liquid over your sliced cucumbers and let cool to room temperature. Let sit in the refrigerator at least overnight or up to 6 hours .
  1. Chopped Cheese
  2. Add the beef tallow to a medium sauté pan set over medium-high heat. Add the onions and cook until the onions get some color, about 4 to 5 minutes.
  3. Add the ground beef and seasonings and sauté until the beef is cooked through, about 5 to 6 minutes.
  4. Top the beef with the cheese and place a lid over the pan, to let the cheese melt, a few minutes more.
  5. Heat the oven to 325°F and toast the bread to your liking. Build the sandwich with the beef and cheese, pickles, lettuce, and tomato. Enjoy!
