Ingredients
- Bread & Butter Pickles:

apple cider vinegar

yellow onion (sliced thinly)

yellow mustard seeds

Kirby cucumbers (sliced into thick coins)
- Chopped Cheese

beef tallow or canola oil

Salt and pepper, to taste

Goya Sazón or Adobo seasoning

slices of your favorite cheese( american cheese is a standard for this sandwich)

Bread of your choice (a nice crusty roll would be nice )

Lettuce and tomato, for serving
Directions
- Bread & Butter Pickles:

Combine all ingredients besides cucumbers together in a medium saucepan and bring the liquid to a boil, making sure all the salt and sugar dissolves.

In a mason or bowl pour the hot liquid over your sliced cucumbers and let cool to room temperature. Let sit in the refrigerator at least overnight or up to 6 hours .
- Chopped Cheese

Add the beef tallow to a medium sauté pan set over medium-high heat. Add the onions and cook until the onions get some color, about 4 to 5 minutes.

Add the ground beef and seasonings and sauté until the beef is cooked through, about 5 to 6 minutes.

Top the beef with the cheese and place a lid over the pan, to let the cheese melt, a few minutes more.

Heat the oven to 325°F and toast the bread to your liking. Build the sandwich with the beef and cheese, pickles, lettuce, and tomato. Enjoy!
