This is a delicious gluten free and dairy free cake that comes together quickly and easily. It is moist and delicious as is, but the addition of powdered sugar, jam, or a dollop of whipped cream elevate it to dessert status. —Realish Food

Maple Syrup

Almond Extract

Lemon Zest

Almond Flour

Directions

Preheat oven to 350 degrees.

In a large bowl, whisk the olive oil and maple syrup together.

Add eggs one at a time and whisk until incorporated.

Add in cinnamon, almond extract, and lemon zest and whisk until combined.

Fold in the almond flour and baking powder and mix until everything is incorporated

Grease an 8 inch round pan with olive oil. Line the pan with a piece of parchment that is cut to fit the bottom.

Pour batter into prepared pan and bake for 30-35 minutes or until cooked through.
