In this simple twist on a classic highball, the flavors of the whisky are heightened by the warming spices of chai. The lime and ginger ale bring a citrusy balance and refreshing effervescence that make this cocktail both a perfect aperitif and a soothing digestif. It's just the right drink for a special holiday occasion, but we also love to sip it any old weeknight. Ingredients

For the cocktail:

1 1/2 ounces
Johnnie Walker Black Label

1/2 ounce
Chai Cordial (see recipe below)

1/2 ounce
fresh-squeezed lime juice

3 1/2 ounces
Fever Tree ginger ale

Fresh lime wedge and dehydrated lime wheel, for garnish

For the Chai Cordial:

10 grams
House of Waris Botanicals Chai Tea

4 ounces
cane sugar
-
4 ounces
filtered water
-
1 pinch
salt

Zest of 1 whole lime
Directions

To make the cocktail: Add ice to a chilled highball glass.

Measure the ingredients (except for the lime garnishes) and pour into your glass.

Gently stir with a spoon, incorporating all ingredients and chilling the cocktail.

Garnish with a lime wedge and dehydrated lime wheel.

To make the Chai Cordial: Add filtered water, sugar, salt, and chai tea to a saucepan over medium heat. Bring mixture to a boil, add lime zest, and let simmer for a few minutes, until the sugar dissolves completely. Cool and strain with a cheesecloth before use.
