This is one of my favourite creation when it comes to salads, it's pretty easy and absolutely delicious.
A lot of people find eating raw plantain a problem but I guarantee, after trying this salad, you'll feel differently. —Fork My Day

Ingredients

1 tablespoon
lemon juice

semi ripe plantain

medium red onion

medium sized tomatoes

1 tablespoon
crushed black pepper

1 teaspoon
sea salt (adjust to your taste)
Directions

Cut up plantain, onion and tomatoes and add to a salad bowl.

Add lemon juice (I find using fresh lemon better for this recipe), black pepper and salt, then mix together with a kitchen tong.

Marinate for 5-10 minutes in the fridge or in a cool place, garnish with coriander (cilantro for the folks outside of the UK) and serve.
