To make a tasty delicious broth, first you need a big list of different ingredients, including lamb meat with fat and bones, beans, some onions with garlic, some potatoes, tomato paste, mint powder, and spices like salt, black pepper, turmeric, lemon powder, and a little verjuice. Then, in the second step you need to go through the recipe step by step to make sure you make the original version of this delicious Persian cuisine.
You need to soak the peas and beans in the water the night before and also make sure to change the water three or four times. Then, fry the lamb meat, fat, and bones with chopped onions and garlics then, add the peas and beans with 6 to 8 glasses of water to the mixture and let it cook. Be careful to get the foam surfaces in the pot while cooking and throw it away. After the meat is half-cooked, add potatoes and let it cook for another half an hour. Once the peas and beans are well-done, separate the fat, mash and fry it with tomato paste, add dried lemon and mint powder to the mixture. Finally, salt and black pepper is added with verjuice and it is ready to be served.
This recipe is served in 2 ways. It is either served with all ingredients in a bowl with pieces of a Persian bread called Sangak, tossed in it or the gravy is separated in the bowl with tossed bread in it, and the rest is mashed and served separately in a plate side-dished with pickled vegetables and onions.
