These thin & crispy almondina cookies have a delicious nutty flavor from a mix of almonds & pistachios. They are super thin & crispy from a double bake in the oven & they're slightly sweet & chewy from the raisins. Also, a great bonus is that they're an easy vegan one bowl recipe! Easy cleanup & cookies as the reward!

- ½ cup of Raisins
- ½ cup of sugar
- 1 cup of flour
- ½ teaspoon of baking soda
- Pinch of Salt
