These are SO easy to make and hands down one of our very favorite dinners. Savory and sweet. Tender and smokey….yum! Marinate the chicken the morning of, or the night before so they are extra flavorful. Dinner will be so easy to put together. —simmering essence
Ingredients

Chicken breasts, cubed 1 inch

Cilantro

Cloves garlic

1/4 cup
Olive oil

1 teaspoon
Salt

Sweet chili sauce

Pinch
Red pepper flakes

Lime wedges
Directions

Puree cilantro, garlic, olive oil, salt, and pepper flakes in a mini food processor or blender. Pour into a gallon zip-loc or airtight container. Add the chicken cubes and stir to coat. Let marinate in the fridge 8 hours or overnight.

Preheat your outdoor grill to high. Alternately, you can cook these in your broiler. Skewer the chicken (making sure to pre-soak bamboo skewers), placing pieces close together.

Cook the chicken a total of about 10 minutes on that high heat, turning so each side gets charred. Halfway through cooking, baste the skewers with the sweet chili sauce. Continue to cook and then baste one more time before pulling them off the grill.

Right before serving, spritz a bit of lime juice over all the skewers. Serve with extra lime wedges and chili sauce on the side. Savory coconut rice (Here in our pork taco recipe) or cauliflower puree are a great side with this.
