Coffee cake is a pound cake layered with a brown sugar and cinnamon streusel. These recipe is a vegan version of a delicious coffee cake, perfect addition to your morning coffee or afternoon tea.

  • Cake
  • 1 cup flour
  • 1/4 cup cane sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup vegan buttermilk
  • 1/4 cup canola oil
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Topping
  • 1 cup flour
  • 1/3 cup coconut sugar
  • 2 teaspoons cinnamon
  • 1/4 cup canola oil
  • 1/4 teaspoon salt
In This Recipe
  1. Preheat the oven 365 F. Brush with oil and line baking pan with parchment paper.
  2. In a large bowl whisk together flour, sugar, baking powder and salt. Set aside. In a separate bowl whisk oil, buttermilk and vanilla.
  3. Pour the wet mixture into the dry.
  4. For the topping: combine together flour, sugar, cinnamon and salt. Add oil and toss utill it appears crumbly.
  5. Fill the pan with batter and sprinkle crumb topping.
  6. Bake 25-30 min. Let it cool completely before serve.
