Coffee cake is a pound cake layered with a brown sugar and cinnamon streusel. These recipe is a vegan version of a delicious coffee cake, perfect addition to your morning coffee or afternoon tea.

vegan buttermilk

1 cup
flour

1/3 cup
coconut sugar

Directions

Preheat the oven 365 F. Brush with oil and line baking pan with parchment paper.

In a large bowl whisk together flour, sugar, baking powder and salt. Set aside. In a separate bowl whisk oil, buttermilk and vanilla.

Pour the wet mixture into the dry.

For the topping: combine together flour, sugar, cinnamon and salt. Add oil and toss utill it appears crumbly.

Fill the pan with batter and sprinkle crumb topping.

Bake 25-30 min. Let it cool completely before serve.
