Adobo is one of the best Filipino dish that everyone loves. It is a stew with a mixture of different flavors cooked into perfection. Hop in and learn how to cook this delicacy and give in to your cravings!

What You'll Need
  • 1 tablespoon cooking oil
  • 3 garlic, peeled and minced
  • 1 piece onion, medium sized
  • 1 ginger, chopped into small strips
  • 500 grams ginger, chopped into small strips
  • 500 grams pork, cut into serving
  • 3/4 cup soy sauce
  • 1/4 cup vinegar
  • salt
  • pepper
  • 1/2 tablespoon brown sugar
  1. Heat cooking oil in a pan in medium heat. Once heated, saute garlic, onion, and ginger until light brown.
  2. Add in the meat. Stir until the spices are fully incorporated. Cover for about 6 minutes and allow the meat to slowly cook. The meat will release its natural juice in this process, which will make adobo more flavorful. Stir occasionally to avoid meat from burning.
  3. When the meat is cooked, put in soy sauce. Cover and allow to simmer for a few more minutes. Add the vinegar when the meat is tender. Let the mixture simmer again.
  4. Add salt and pepper to taste. Cover and allow the sauce to reduce.
  5. Once the sauce is reduced, season with sugar (totally optional) to balance out the flavors. Adjust the seasonings according to your taste buds. Let it simmer for 3 more minutes. (You may add a bit of water if you think it is too salty. Then just let the mixture simmer to reduce the sauce.)
  6. When the meat is tender and fully cooked, turn off the heat. Transfer to a serving bowl and enjoy with hot rice!
