Corned Beef Hash

Sauteed potatoes in onions and garlic, with canned corned beef. A delicious breakfast or brunch dish, most commonly paired with rice or bread, in the Philippines. —Mr. Hugh's Kitchen

What You'll Need
Ingredients
  • 1 Purefoods corned beef
  • 1 Purefoods corned beef
  • 1 onion finely diced
  • 2 garlic minced
  • Salt
  • Ground black pepper
  • Cooking oil
  • Chilis or cayenne powder
Directions
  1. Soak diced potatoes in salt water. After you dice the potato, put it in a bowl of water with a tablespoon of salt. Let it soak for 2 minutes, while you chop and dice your other ingredients. This will remove some of the starch from the potatoes and prevent oxidation (or the browning of the potatoes). Don’t soak it for too long to avoid softening the potatoes. Drain after 2 minutes.
  2. Start cooking the potatoes. Heat up your pan under medium fire, and add the cooking oil. Saute the garlic and onions, until onions turn translucent. Add the potatoes, salt and ground black pepper. Constantly stir to make sure the browning is even in all parts of the potatoes. Cook it for 3 to 5 minutes, depending on the size of the potato cut.
  3. Add the corned beef, and mix it well with the potatoes. There will be juice coming out, so let it simmer and reduce for a minute or two, while constantly mixing. During this part, you can also add chilis or cayenne pepper if you like it spicy. Mix it well.
  4. Turn off the heat, and transfer it to a serving dish.
  5. You now have your Corned Beef Hash! Serve and enjoy!
