Fried rice with fermented kimchi bits, and chopped SPAM cubes, Korean seaweed, and topped with sunny-side up egg, more korean seaweed, sesame seeds, and green onions. —Mr. Hugh's Kitchen

Ingredients

2 cups
white rice

1/3 cup
chopped SPAM

Salt

Ground black pepper

1/2 tablespoon
sesame oil

1/4 cup
korean seaweed/ nori

sunny side up egg

Chopped green onions

Sesame seeds

1/4 cup
water

1/2 cup
kimchi with the juice

1 teaspoon
brown sugar

small onion chopped

cloves of minced garlic

Cooking oil
Directions

Heat up the pan or wok under medium fire, and add the cooking oil. Saute onions and garlic until onions are translucent.

Add chopped SPAM, and cook for about a minute. Add chopped kimchi with the juice, and saute for another minute. Add water, and let it simmer under low fire for 30 seconds.

Add white rice, salt, pepper, brown sugar, and sesame oil. Mix everything well.

Once all the rice is covered with the kimchi juice, add the korean seaweed, and mix again for another minute.

Once done, transfer it to a serving bowl or plate, and top it with sunny side up egg, salt, sesame seeds, more korean seaweed, and chopped green onions.
