What You'll Need
Ingredients
  • 1 cup pureed pumpkin
  • 2 cups rolled oats, ground
  • .5 cups rolled oats, whole
  • .25 teaspoons salt
  • .5 teaspoons cinnamon
  • .25 teaspoons each of ground ginger, cloves nutmeg
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • .5 cups sweetener (sugar, stevia, whatevs)
  • 1 cup plain Greek yogurt
  • 1 cup egg whites
  • 1 teaspoon vanilla extract
  • .5 teaspoons maple extract
Directions
  1. Mix pumpkin with yogurt, extracts, and egg whites. Then add the dry ingredients in any order.
  2. Pour into greased 8" square pan or 9 x 13. Bake at 350F 35-45 mins (or until golden brown on top.) Cool. Horde and eat it all yourself.
