Whether you're looking to try out the Whole30 program or just want to cut back on sugar for your New Year's Resolution, these turkey pinwheels are a nutrient-dense way to enjoy turkey by stuffing the lettuce leaves with colorful fruits and vegetables. These can be served with a basil pesto dipping sauce for the final flavor explosion. —Applegate

Ingredients
  • Pinwheels
  • 8 butter lettuce leaves
  • 1 red pepper, cored and thinly sliced
  • 1 apple, cored and thinly sliced
  • 1 packet Applegate Organics® Oven Roasted Turkey Breast
  • Basil Pesto Dipping Sauce
  • 2 cups fresh basil
  • 1/2 cup olive oil
  • 1/2 (juice from) lemon
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/4 cup pine nuts

Directions
  1. Place all basil pesto dipping sauce ingredients in a food processor and pulse until creamy and well combined. Set aside.
  2. Wrap a few thin slices of red pepper and apple in a slice of turkey.
  3. Wrap 1-2 butter lettuce leaves around the turkey rolls and secure with a toothpick.
  4. Arrange on a platter and serve with the basil pesto dipping sauce.
