Pork Giniling is a Filipino delicacy for all seasons. You can cook it as a usual daily dish or on special occasions. Pork giniling is a very good balance of meat and veggies, plus the ripe tomatoes which is good for the heart! —Mr. Hugh's Kitchen
Ingredients

tomatoes, chopped

ground pork

carrot, cut into small cubes

potato, cut into small cubes

can green peas

1 piece
bell pepper, chopped into small cubes

pork cubes

1-2 tablespoons
tomato paste (optional)

Directions

Heat a pan and put in cooking oil. Saute onion and garlic. Add in tomatoes. Cover for about one minute to let the natural flavors come out.

Add ground pork. Occasionally stir to avoid the meat from burning and sticking to the pan. Season some salt and pork cubes, mix and cover. Let the natural juice of the pork come out. Let it simmer until the meat is tender and cooked.

Put in carrots, potatoes, and green peas. Mix together by stirring occasionally. Cover and let it simmer again for about 5 minutes.

Add tomato paste (if preferred) and stir until the paste is fully incorporated. Put in bell pepper. You might want to add a little water at this point.

Season with a bit more salt and pepper. Let it simmer for 3 more minutes.

Turn off the heat, transfer to a big bowl and serve with hot rice!
