  • Serves 4
Ingredients
  • 2 tablespoons dairy free butter
  • 1 cup boiled shredded chicken
  • 1 onion, chopped
  • 2 garlic cloves
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 4 cups chicken stock or plain water
  • 4 tablespoons gluten free flour
  • 1 cup dairy free cream
  • gluten free croutons, as required

Directions
  1. Boil and shred the chicken. Reserve the stock. Melt butter in a pot on medium high heat. Then add garlic and onions, saute until tender.
  2. Add shredded chicken, salt and pepper and cook a few more minutes. Then sprinkle the gluten free flour and saute for a few minutes.
  3. Then pour the chicken stock, bring it to boil. Then simmer until thick.
  4. Add the dairy free milk/cream and cook for a few minutes. Adjust the seasoning. For smooth soup, place it in a blender and blend to desired consistency.
  5. Serve hot garnished with parsley and gluten free croutons.
