This dish was inspired by Wapa Taco in San Antonio, Tx. I lived there a few months for my husband's job and fell in love& this viral taco the birria its basically a nice roast beef slow roasted and you put into a corn tortilla with cheese and onion and fry in the sauce the beef cooked in..then dip the taco in the yummy goodness. Ok ok but the spice was a little much so I toned it down and made it a little my own. So here is my twist on a birria taco. —Tiffany Audia
Ingredients

2 -3lbs
Roast beef or nice pork loin roast

White onion

1 bunch
Parsley

1 tablespoon
Tomato paste

Beef or chicken boullion cubes ( prefer Knorrs brand)

1 tablespoon
Garlic powder

2 tablespoons
Worcestershire sauce

1 tablespoon
Onion powder

Jalapeno pepper to garnish

Pack corn tortillas

1 tablespoon
Corn starch

1 teaspoon
Crushed red pepper
Directions

Add corn starch to both sides of beef and dash of black pepper to each side. Saute with oil in your instant pot or on stove, each side about 2 mins just enough to brown each side a little bit.

Cover meat with water and add 2 beef or chicken boullion cubes, 1 tablespoon onion powder, 1 tablespoon garlic powder, salt, pepper, 1 tablespoon tomato paste, 1 teaspoon crushed red peppers, 1 tablespoon of oil ( just to add some fat back) . now let slow cook all day in crock pot for about 8 hours.

Now shred meat with fork and heat a skillet on med high heat now you will dip a corn tortilla in the sauce the meat cooked in yup that tomato sauce...trust me.... Dip each side and add to a lightly oil skillet and quickly add some of your meat, some shredded cheese and a few diced onion... Let simmer about 1 min now fold one side over to make like taco continue to simmer about 1 min.

Now flip taco and simmer 2 mins and put on plate while you make the rest.

If making a big batch put on pizza pan or cookie sheets and can throw in air fryer to reheat or throw all in oven to crisp up last min these will get soggy if you dont cook enough so let them get crispy.

Serve with fresh parsley over top with more diced onion with a bowl of sauce to dip them in.Dont forget lime to squeeze over. Also add avocado, hot sauce, sour cream for even more flavor.
