Ingredients
  • 2 tablespoons olive oil
  • 4 garlic cloves
  • 1 green chili pepper
  • salt, to taste
  • 1 onion
  • 5 tomatoes
  • 1 bay leaf
  • 1 teaspoon dried parsley
Directions
  1. Heat olive oil in a medium saucepan over medium heat. Add chopped onion, chili pepper, and garlic and cook until soft.
  2. Add chopped tomatoes and cook until soft. Now add tomato paste, 1 cup water, bay leaf, parsley and bring it to a boil.
  3. Season with salt and pepper - to taste. Reduce heat and cook until slightly thickened, for about 30 minutes.
  4. For a chunky sauce, use the sauce as is. For a smoother sauce: let the sauce cool down then blend in a blender.
