This is how a grilled cheese sandwich should be, nothing more, nothing less, and nothing else. —2kidsandthekitchen
Ingredients

slices of sourdough bread about 1/2 an inch thick

400 grams
shredded or sliced sharp cheddar cheese

400 grams
shredded or sliced low-moisture mozzarella cheese

4 tablespoons
extra-virgin olive oil
Directions

Preheat skillet over medium heat.

Coat the sourdough bread with extra virgin olive oil.

In a medium to high heat Pan, Grill one side of the bread for about a minute or until lightly brown before adding your cheeses to it.

Flip it over, layer your cheeses about 1/2 inch thick in total and make a sandwich.

Heat each side of the sandwich. Using a spray bottle, generously spray water in the pan to create steam, and cover it. Cook for 2 minutes or until the cheeses are melted.

Repeat with remaining ingredients. Serve hot or straight from the pan.
