CHICKEN W MUSHROOM MARSALA SAUCE —Hilary Haroche

Ingredients
  • SAUTE CHICKEN
  • 4 CHICKEN BREAST POUNDED THIN
  • 1/2 cup FLOUR
  • 1 teaspoon SALT
  • 1 teaspoon PEPPER
  • 3 tablespoons OLIVE OIL
  • MARSALA SAUCE
  • 2 cups SLICED MUSHROOMS OF CHOICE
  • 4 cups CHICKEN BROTH
  • 1/2 cup MARSALA WINE
  • 2 tablespoons OLIVE OIL
  • 1/4 cup SLICED SHALLOTS
Directions
  1. SAUTE CHICKEN
  2. ADD SALT AND PEPPER TO THE FLOUR
  3. COAT THE CHICKEN WITH FLOUR
  4. HEAT THE OLIVE OIL AND SAUTEE CHICKEN TO A BROWN COLOR BOTH SIDES
  5. REMOVE CHICKEN
  6. ADD CHICKEN STOCK TO THE PAN & REDUCE FOR 20-30 MINUTES UNTIL
  1. MARSALA SAUCE
  2. ADD OIL TO A PAN
  3. SAUTE MUSHROOMS UNTIL BROWNED
  4. add to the reduced broth
  5. add the chicken cutlets

There are a few steps that they forgot to put in the recipe. Shallots? Marsala wine? When?
