the ULTIMATE banana bread

Fluffy and delicious banana bread with a nutty top. What more is there to say. It's banana bread perfection. I promise. —Emma Foster

What You'll Need
  • 3 Brown Bananas
  • 1/2 cup Soft Brown Sugar
  • 1/2 cup Caster Sugar
  • 1/4 cup Butter (I used dairy free)
  • 1/4 cup Yogurt (I used Oat)
  • 2 Large Eggs
  • 1 teaspoon Baking Soda
  • 2 cups Plain Flour
  • 20 grams Hazelnuts
  1. preheat your oven to 180c/350f
  2. on a plate, peel and mash your bananas, then add them to a bowl with the sugars and beat
  3. add in the butter and yogurt and beat again until incorporated
  4. whisk in the eggs
  5. then sieve in the baking soda and flour, whisk until it looks like a smooth batter (don't worry about little lumps of butter, they will melt when baking)
  6. line and grease a baking loaf tin with dairy free spread
  7. add the batter to the tin and sprinkle nuts on top
  8. bake in the oven for 50-55 minutes. Leave in the tin until cooled.
